Made exclusively from the raw milk of Lacaune sheep — a breed prized for its rich, generous yield — this Roquefort is intensely flavoured yet beautifully balanced. The paste moves between silky, creamy curds and grittier pockets of blue mould, creating a texture that is as complex as the flavour. Perhaps a touch fruitier than most Roqueforts, with a mild acidity and a natural saltiness that lingers just long enough.
